Hi, my name is Marissa. I'm a 21 year old Boston College student and marathon runner. I have a passion for fitness, running and nutrition as well as music, art, concerts, playing instruments, marching band, cheerleading, fashion, Neuroscience, Psychology, cooking, Boston, movies and of course certain tv shows (The OC and One Tree Hill in particular).

Work out tonight and what I ate after:

Tonight I did HIIT for about 25 minutes. 

This consisted of 1 min at a pace that I varied between 8.5 and 9.0 mph followed by 2 min at 6.0 mph. 

Then I biked for 20 minutes.

Then I did some leg work - abductor, adductor, weighted squats, leg lifts

Ab work - reverse crunches, plank, hanging leg lifts

Then I came back kind of late and didn’t really feel like making a big dinner. So I made myself a banana scramble! These are so delicious, and if you haven’t tried making them yet, shame on you.

This is from Edible Perspective:

Cinnamon Banana Scramble

  • 3T rolled oats
  • 1T ground flax meal
  • 1T almond milk [or any milk]
  • 1/2 banana
  • 1t cinnamon
  • splash of vanilla
  • 1T unsweetened coconut
  • drizzle of maple syrup/honey/agave [optional]
  1. Mash banana until wet/egg-like with a fork.
  2. Mix in all other ingredients until holding together.  *The mixture will be very moist.  If it is very thick + dry add a 1/2-1T extra milk.
  3. Heat + grease a pan over medium heat.
  4. Plop the scramble into the pan and shape into a patty, about 1/2” thick.
  5. Cook for about 3min until browned.
  6. Toast bread or english muffin.
  7. Flip + cook until the other side is browned.
  8. Top on toast and slather with peanut butter or other nut butter and whatever other toppings you want.

I put mine on whole grain toast with some Organic Berry fruit spread I got from SoWa Open Market this past weekend. 

It was so delicious! YUM.
